Busy week!

Have you ever had a day or week where you felt really busy, but didn’t actually get anything done?  That is this week for me.  I’ve been see-sawing between crazy busy and stupid bored at work, and home has felt the same.  Friday cannot come fast enough!  On Saturday we are going to pick up a wedding present and I can’t wait.  My husband’s aunt very generously offered us one of her gorgeous paintings as a wedding gift, and it is ready for pick-up.  This is our first real piece of art, and we have had the spot picked for months!

A highlight of my week so far has been receiving my Glo Bars that I ordered last week during Oh She Glow‘s sale for Haiti.  I bought the X’s and Glo’s Variety Pack featuring the new Adore bar, and boy is it great. The flavour of the bar is “S’more with homemade graham cracker.” The graham crackers give the bar a nice added crunch, and the vegan marshmallows and non-dairy dark chocolate are delicious.  At 233 calories these bars are a great snack (especially pre-workout!) and with 18% of your daily fibre and 10% of your daily protein(for the Adore bar), Glo Bars are wayyyy healthier than the vending machine treats that always call my name at about 3pm.  I just can’t say enough about them, everyone should check them out!

Comfort food: The perfect recipe to end a great weekend

Comfort food takes on many different forms.  Chicken noodle soup, grilled cheese & tomato soup, soft-boiled eggs and toast soldiers, stew, macaroni & cheese.  These are things that typically come to mind.  My favourite comfort food is a recipe that my mom makes,  a warm yummy mix that never fails to make me feel good.  I’m sure it has a name somewhere, but heck if I know what it is.

Mom’s Chicken & Sausage & Rice


1 medium onion

3 boneless skinless chicken breasts

3 sausages (Italian or chorizo works really well)

1 cup white wine

2 cups brown rice

4 cups chicken stock or water

2 cups frozen vegetables ( I used corn & peas)

Step 1.

Cut chicken & sausage into bite sized pieces, dice onion

Step 2.


Brown chicken and onion with a tiny bit of oil or butter in a large pot with a lid.  Once brown, remove the chicken and onion to a bowl.

Step 3.


Brown sausage in same pan and remove from pan


Step 4.

Apply white wine


deglaze bottom of the pan, scraping up all the yummy brown bits

Step 5.


Add back the chicken and onion and sausage, along with the brown rice and the water

Step 6.


Cook for 40 minutes, or until rice is cooked

Step 7.


Remove from heat and add the frozen veggies.  Stir the vegetables into the mix, and put the lid back on for 3 minutes to cook them.

Step 8.



This recipe serves about 6, or, it serves 2 people 1 dinner and about 4 lunches.

1 bowl of yum + 1 cozy fire + rice krispie squares = a great Sunday night!

What a great weekend!!

This weekend, like so many others has flown by, but I had such a great time!

Yesterday morning I had a great time with my sister-in-law as she went to try on her wedding dress – gorgeous.  She is going to be SUCH a beautiful bride, I can’t wait.

After lunch I headed to the gym, and ran 4km in 38m!  it was the first time I ran for 5 consecutive minutes!  I left the gym super sweaty but with a huge smile on my face that stayed for the rest of the day!  I am so happy to be seeing an improvement in my running!

I had my girlfriends over after dinner for some drinks and a gab fest.  I love girls night!  It started off with a blast from the past – I got out my high school yearbooks and we passed them around reminiscing.  We talked and talked until 1:30am, boy was I pooped after that!

I woke up to some delicious pancakes a la husband, and we took lunch to my parent’s house.  My mom had surgery on her foot on Monday, and so I drove her to the drugstore today to pick up some necessities.  Right now, my husband is napping, and I’m watching Julie & Julia, which is making me hungry.  I’m warm, sleepy, and very relaxed.  What a wonderful weekend!
